Sauternes is a special type of dessert wine for which the grapes that are used undergo an inoculation with Botrytis, a mold fungus responsible for ‘noble rot’. Brewed with barley, oats, wheat and aged hops, this beer was entirely fermented and aged in Sauternes barrels for over a year.
