K97 is a yeast strain that has intrigued us for some time and we’ve used it in recent beers such as Jolly Days and Pizza House 2. It is a bit ‘cleaner’ and attenuates more than many English ale strains which means the finished beer is slightly drier than your average NEIPA. It also gives a very interesting combination of stone fruit and subtle pepper esters that can serve to balance a very heavily hopped IPA.
