Wanted to get a low density and dryness in the beer so that the hops were more pronounced, as in Brut IPA, but without the addition of enzymes, so at 50% fermentation injected Saison yeast to replace the enzyme and get to the final FG. at 1,002, and that's how the name for this Brutson IPA beer came into being. To make Brutson even more interesting, introduced one relatively new hop, Idaho 7, which gave us a fine tropical and resinous note, along with Idaho 7 added a little Azzace as citrus support.
