Baeckeoffe-style Gose.
After Tarte Flambée (Flame in Gose) and sauerkraut (Krautwerk), we are sorry to present Back Off, a Gose inspired by... Baeckeoffe.
This dish combines meat, vegetables (potatoes, carrots, onions, and leeks) and spices (thyme, bay leaf, parsley, salt, and pepper), generously drizzled with white wine and traditionally cooked overnight in a baker's oven in a ceramic pot sealed with a dough lid made from flour and water.
Apart from meat (emulated by smoked malt), parsley and white wine, everything is in there.
