The spontaneous beer included in the blend provides a sense of terroir and an additional layer of yeast complexity, while the golden wild ale delivers their signature funk and refreshing acidity. After blending the two beers they refermented with blue Juniper berries and lemons. Juniper adds resinous notes of herbaceous spice and pine with underlying citrus, while the lemons complement the acidity produced by our mixed culture.
