Perle - Perle de Noël

This companion for winter evenings is an end-of-year brew made from caramelized malt varieties, high fermentation, and a subtle spice blend. Spices, gingerbread, and star anise dominate the nose. It develops with flavors of mandarin, orange, cinnamon, and cloves. The entry into the mouth is rich, sweet, and the very fine bubbles are noticeable in the soft, almost oily texture. In the middle of the mouth, the caramel flavors concentrate, then exotic fruits and spices come to the fore again. The finish is just as rich and sweet as the beginning, with a hint of fruity bitterness and a hint of sugar. The sensation is that of a liquid gingerbread, with a fruity bitterness in the finish.
