While much of our work in the realm of spontaneous beer production employs ingredients and processes that follow a Belgian tradition, we’re also interested in exploring the versatility and approachability of spontaneous fermentation outside that lens. Inspired by the ancient farmhouse style of Finnish Sahti, Satu marks our biggest step in a decidedly different direction. Starting with a grist of local unmalted wheat, pilsner, Munich and rye malt and hopped with whole leaf aged hops, Satu sees coolship additions of spruce tips, juniper (needles and berries), citrus and ginger. Aged two years in a combination of gin barrels and neutral French oak casks
