Saisons hail from the agricultural southern part of Belgium and northern France. They are intended to be dry and refreshing as they were traditionally consumed after a hard day’s work in the fields. Pale amber in color their version is perfect for a late summer day. European Pils malt provides light, lightly malty base, and a touch of buckwheat adds a lightly spicy bit of interest. Dryhopping with Calypso and Mosaic hops give it aromas of pear, grape, and even a little mint. Then Saison yeast adds lots fruity, peppery aromas as well as the very dry finish. In keeping with the French theme, this beer is named after the late Jacques Cousteau, explorer and oceanographer who delighted American television audiences in the 70’s and 80’s with his PBS shows on marine life. His research ship was called Calypso.
