The defining characteristic is that it is an ale made with lager yeast. The origin of the name “steam” supposedly came from the hissing sound of carbon dioxide escaping from the casks during fermentation. Most likely this was due to overexcited lager yeast that is used to colder temperatures fermenting at higher ale-like temperatures. This brew is light copper in color and has a toasted caramel-like maltiness in the aroma and flavor. They use Millennium and Styrian Golding hops to achieve the higher hop bitterness and medium hop flavor.
