Speciation Artisan Ales - The Laurentian Series: Octoploid

Spontaneously fermented ale aged in a single oak puncheon with strawberries and basil - Collaboration with 8 Degrees Plato - It’s hard to convey the crazy journey that this beer has taken to get to this point! This puncheon was filled back in 2018. We teamed up with our friends at 8 Degrees Plato late 2019 to taste and blend. We then bottled April 2020. After nearly a year in bottles, it never carbonated, so we opened each bottle... one at a time... and dumped it into a bottling tank to be re-bottled. Thankfully it worked the second time, and the results are staggering! Like a walk through a strawberry field on a warm summer day.
