Way Coffee Brown Ale

The base style for this beer is Brown Ale. It is a drier beer, with less residual sugar and coloring from special malts. The coolest thing about this beer is the addition of fermented coffee. We chose the company Fuc (Franck´s Ultra Coffee) that works with one of the best coffees in Paraná, organic, certified and fermented. After fermentation, the coffee is still worked in a green state (not roasted) in oak barrels. In this project, a barrel previously used to make Cachaça was used, where the coffee was resting for several months. The roasting process is also special, seeking the ideal drying point and avoiding excessive caramelization, which contributes to a coffee without bitterness, with balanced body and acidity, after which an infusion is made during the beer maturation process.
