The microbrewery was established in 2011 as an integral part of the Džek Ranch project. Under the supervision of an experienced brewmaster, Mr. Oldřich Záruba, a 13-year-old beer is born here and in the summer period also an eleven-light, unfiltered, yeast and unpasteurized beer. It bears the label Our beer. The technology of the restaurant microbrewery was supplied by Ross Holding, which included a brewhouse, fermentation tanks, lager tanks, transfer tank, carbon dioxide station and part of the automation. This ensures separate operation of the individual processes, which are monitored, evaluated and confirmed via the 17 ”touch screen. The technological equipment also includes smaller sub-units, which take care of the complete cooling of rooms, fermentation tanks, wort cooling, ice water production and also the preparation and distribution of compressed air. The mobile CIP station takes care of the sanitation of the whole brewery.
