grains and grapes hybrid from spontaneous co-fermentation of organic barley, organic wheat of evolutionary population and sangiovese biodynamic grapes from Tenuta La Novella, Chianti Classico, Tuscany. The grapes were harvested by ourselves, stomped by feet and added to the beer wort the same day in which it was brewed. No added microorganisms, no brett, no yeast, no sour pitch. Fermentation is just the result of the action of the microorganisms that live on the skins of the grapes.
