The Goat is rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in foudre with two saison strains and brett, then allowed to age for three months. The Goat was refermented in the bottle with brett, and has been conditioning for four months.
