The top-fermented beer is brewed in Cologne under the specifications of Craft Beer pioneer Mikkel Borg Bjergsø by Gaffel master brewer Reiner Radke according to the Kölsch convention. The Cologne Purity Law is the basis for protection by the European Union. Since 1998, Kölsch has been both a variety and a designation of origin. Therefore the speciality may only be brewed in Cologne.

Kölsch is a regional variety that is based in the Rhineland. Nevertheless, the top-fermented beer enjoys an excellent reputation internationally. Kölsch from Cologne can be found all over the world: in the USA as well as in China, Brazil and of course in the neighbouring European countries.
